Carrot Suji Laddu

Carrots halwa are so common, lets make something different. How about laddus. Sounds interesting! Well, they are much much yummier than you have just imagined.

My family loves sweets after meal but rarely I make them happy as for me sweets means lots and lots of sugar thus loads and loads of calories and hell lot of health problems progressing towards us little day by day.

Carrots are very good for eyes. We must encourage kids to eat them raw in salads. It can be easily included in our diet. I mix carrots in almost everything be it suji upma, oats upma or sevai upma or soups salads pulav etc. As a dessert Carrots are always considered for gajrela or carrot halwa but here's my special carrot ladoos which is really unique.

 Carrots – 1 cup grated
Suji – 2 cup
10 Cashew
Cardamom powder 1 tsp
1 cup sugar (+/- as per taste)
Ghee – 1/5 cup

How to Make

★ In a kadhayi add little ghee and heat.
Add cashewnuts and fry golden.
Now saute semolina /suji in same kadhayi in ghee till nice aroma comes and suji is roasted properly. 

★ Now in same kadhayi add rest of the ghee and cook grated carrots in it. Saute well till cooked. Now add roasted suji, sugar, cardamom powder and cashewnuts and switchoff the gas.  

★ Apply little ghee on palms and make round ladoos out of this matter.

Suji laddoos are ready.
