Oats Vegetable Idli

Idli a south indian breakfast item since ages were purely limited to rice dal batter. With time we have realised good qualities of other grains like oats, broken wheat, barley, ragi etc which are now equally popular and included in meals.
Oats as widely known for its health benefits makes umpteen number of delicious recipes for breakfast or evening snacks. Oats idli was one of my early experiment which became an instant hit.
Quick and easy to prepare. What more One can ask for_ its so healthy !

Idli is anytime energy saver recipe for me. Lol. I mean, not much efforts required. Can make batter in mins and then put to steam. Thats it. No mess. No cumbersome process. Not really required to stand besides.
I usually make idlies with lots of veggies whichever is available to save my morning precious time, energy and yet get healthy breakfast



Recipe

Ingredients
1 cup oats
1/3 cup suji
1/2 cup thick curd
1 cup water
Salt as per taste
Red chilly powder 1 tsp

For tadka
Oil 1 tsp,
hing pinch,
 rai 1 tsp,
kari patta few,
mix finely chopped veg 3/4 cup.

Method
In a bowl mix all ingredients. Keep aside for 10 mins.

In a pan heat 1 tsp oil. When hot add rai, kari patta, hing, and mix chopped veg 3. ( I added finely chopped cauliflower, carrot,  capsicum, beans)

Saute veg till half cooked. Add these to the oats batter n mix well.

Grease idli moulds and just before pouring this batter mix baking soda 1 big pinch and mix well.

Pour the batter into moulds and steam for high in microwave for 6 mins. Or for 10_12 mins in steamer on gas. Check before you demould with knife. It shud come out clean.
Your healthy oats veg idlis are ready to eat !!
